THE SUKTO - A Bengali Mix-
Vegetable
Potatoes-4 pcs
Drumstick 100 gms.
Aubergine- 1 pc (medium in size)
Bitter gourd- 3 pcs (medium in size)
Pumpkin- 100 gms.
Ridge gourd- 1 pcs
Green Banana -1 pcs
Mustard Seed- 1 tsp
Turmeric Powder- 1/2 tsp
Ginger Paste- 1 tsp
Mustard Paste- 2 tsp
Mustard Oil- 4-tsp
Ghee-1 1/2 tsp
HOW TO MAKE THE SUKTO (A Bengali Mix-Vegetable)
Wash all the vegetables and cut into long sliced . Heat 3-4 tsp mustard oil in a non-stick fry pan and put the mustard seeds. Add all the vegetables,when mustard seeds start popping.Mix the vegetables with oil nicely and cook in a low flame under cover.
Take out the cover when the vegetables are half cooked. Now add ginger paste,mustard paste,turmeric powder and half cup of water and mix all the ingredients nicely. Cook till vegetables are well cooked. Once done, put Ghee and take out of flame.
Now you are ready to serve Sukto with warm plain rice.
